Herbal Lozenges
Ok I know its getting colder around some parts of the world (where down here it is just heating up!) so maybe these might come in handy

1 chopped tablespoon of the following (6 tbsp total)
Thyme, elderflowers, sage. mint, mallow, plantain, white horehound (if you can't get all then just make up the volume with whatever you have - a ful batch made on thyme and mint is beautiful!)
1 cup boiling water
3 cups brown sugar
1 tsp butter
2 drops peppermint oil

Put the herbs into a heat proof cup and pour the boiling water over it, let it steep for 15 minutes and strain (push down on the herbs to extract as much liquid as possible)

Add liquid, butter and the sugar to a saucepan and bring to the boil

Once boiled, don't stir but let boil until it hits 140degrees C

Remove from heat and pour into a buttered tray, add the peppermint oil and give a swirl.

Let it cool and mark the mix with a knife at the size lozenge you want... Let cool properly and break into pieces.

Store in a jar and use as needed
